My girlfriend Xiè Xīngyuè is Teacher Zhang's student; she with some students are taking Teacher Zhang's class.

Teacher Zhang with them speak Chinese, not speak English.

My girlfriend is American; she with me speaks English.

她和一些同学在上张老师的课 can I write that sentence like this 她在和一些同学上张老师的课 I want to know the difference!

I would say they are both okay to say and pretty much have the same meaning. 😀
