As gao fei is talking about his ability to write characters and speak sentences as a result of learning Chinese, why does the dialogue use 能 neng instead of 会 hui?

能 means “having the ability to do something” and 会 means “knowing how to do something”.
The following sentences are both acceptable in Chinese:
他能说很多中文句子。
他会说很多中文句子。

Hello! I have one doubt about the phrase “他能说很多中文句子”, why “能” is used there and no “会”? If i say “他会说很多中文句子” will be correct too?

Yes you are right.
能 means “having the ability to do something” and 会 means “knowing how to do something”.
The following sentences are both acceptable in Chinese:
他能说很多中文句子。
他会说很多中文句子。
